::)Serves 4 Cooking time 15-20 min.
Ingredients needed
1 1/2 (750g) cooked shrimp 3 tablespoons butter salt and seasoned pepper (montreal is great here) 2 tablespoons chopped parsley juice of 1 lemon 1/2 cup (125ml) white wine hot boiled rice of choice (jasmine works great here)
Reserve 6 shrimp for garnish,shell and de-vein the remainder. Melt butter in a pan, add shelled shrimp and stir to lightly coat with butter. Season with salt and pepper, add parsley. Sprinkle lemon juice over and stir in wine. Cover and simmer gently for 15 minutes. Serve over hot rice, garnished with the 6 shrimp.
