Ingredients needed
15 3/4 oz (450g) cooked crab meat, drained and flaked 4 cups (1 liter) concentrated fish stock 4 egg yolks 3/4 cup (185 ml) cream salt and pepper dash of nutmeg chopped parsley
Heat fish stock in a deep pan until boiling. Beat egg yolks with cream until smooth and fold into the stock reduce heat and simmer gently, stirring constantly,until the mixture thickens; season with salt, pepper and nutmeg. Fold in crabmeat and simmer 1-2 min and serve sprinkled with parsley!!
